  • Short Biography: Raymond Simplice MOUOKEU holds a Doctorate/PhD in Biochemistry defended in 2012 at the University of Dschang, Cameroon. He is a permanent lecturer at the Institute of Fisheries and Aquatic Sciences (ISH) of the University of Douala in Yabassi since 2012. He has been an Associate Professor since 2018 and also Head of the Academic Affairs, Research and Cooperation Division at the ISH since 2017. Its teaching generally focus on food microbiology, food biochemistry and quality control. Its research activities aim to valorize the Cameroon flora against vaginal and gastrointestinal infections, to identify culinary methods that preserve the antimicrobial properties of fish oils and to assess street food microbiological quality. Its administrative responsibilities lead him to coordinate a set of research activities relating to aquaculture, environmental management and fisheries management. He authored 45 publications in peer-reviewed journals. He is a member of several multidisciplinary research teams including lecturers and students from Cameroonian universities. He has participated to date in the design and implementation of three research projects.
