Elle est titulaire d'un Doctorat\/PhD en Proc\u00e9d\u00e9s Biotechnologiques et Alimentaires soutenu en 2010 \u00e0 l\u2019Institut National Polytechnique de Lorraine (INPL),  Universit\u00e9 de Lorraine (France). Ses travaux de recherche portent sur la caract\u00e9risation nutritionnelle et fonctionnelle des sources non conventionnelles de prot\u00e9ines, la valorisation des plantes end\u00e9miques sources de prot\u00e9ases. Pr. MEZAJOUG est Chef de D\u00e9partement des Enseignements scientifiques de Base. Les enseignements th\u00e9oriques et pratiques qu\u2019elle dispense portent sur la biochimie nutritionnelle, la physiologie approfondie, l\u2019enzymologie, le d\u00e9veloppement des produits nouveaux et le d\u00e9veloppement de la technologie du th\u00e9 au Cameroun.
