Les activit\u00e9s de recherche du Pr. Mbougueng sont centr\u00e9es sur les produits carn\u00e9s, les prot\u00e9ines non animales et les ingr\u00e9dients entrant dans la formulation des aliments prot\u00e9in\u00e9s. Pr. Mbougueng est actuellement Ma\u00eetre de Conf\u00e9rence \u00e0 l'Ecole Nationale Sup\u00e9rieure des Sciences Agro-industrielles (ENSAI) de l'Universit\u00e9 de Ngaound\u00e9r\u00e9 o\u00f9 il enseigne des cours th\u00e9oriques et pratiques de Viandes et produits carn\u00e9, de Conservation, emballages et conditionnement des aliments, de proc\u00e9d\u00e9s de transformation des produits animaux, de propri\u00e9t\u00e9s physicochimiques et technologique des aliments et d\u00e9valuation sensorielle. Pr.
